                MUSHROOM PEPPER FRY


Mushroom is a main item,which Vegetarians order,when they visit Restaurants...
Here In our place,Karur- A famous Veg Hotel- Archana caters us with variety of Veg food...
Both my Father in Law & Mother in law love this Mushroom Pepper Fry & Order every time...
Got the recipe from the hotel long back,But today only I tried & It turned out Lovely & Yummy...
Here is the recipe...
Hope you too try & relish this...
If you had followed my Blog,You would ve noticed that I dont go in for elaborate cooking steps...
I finish it Short... This too is a easier procedure only...



 MUSHROOM PEPPER FRY



Mushroom-1 Pack
Maida-1 Cup
Cornflour-1 Tsp
Pepper powder-2Tsp
Water-2 Tbsp


Oil-1 Tsp
Saunf-1 Tsp
Curry leaves-10
Pepper powder-2 Tsp
Salt-To taste
Cut mushrooms into two,Sprinkle maida,Cornflour,Salt & Pepper..
Sprinkle little water and mix well...
Deep fry in oil...
Be careful,as water splutters when you fry Mushroom in oil...
Keep aside..
You can prepare till this step & keep..
Later finish the final stage,Hot to the table..

Take some oil,Add Saunf,Curry Leaves..
Add the fried Mushrooms..
Add pepper powder & Salt..
saute well...
Serve hot...
It is a good starter for dinner..
Or a side accompany for Lunch too...

Though Vathal Kulambu is a regular dish of our South Indians, Each one has their own way of making it....
So I thought I'll post here, My style of Vatha Kulambu,Which is my All time Favorite with Hot Rice & Appalam...
Either it be for a Get together or for a Lazy day's lunch,Its very apt & Easy too....


VATHAL KULAMBU

INGREDIENTS:

Manathakkaali vathal-2 Tsp
Small Onions-12
Garlic-6
Tamarind-Lemon sized
Chilly Powder-2 Tsp
Dhania Powder-2 Tsp
Salt
Coconut-2 Tsp
Curry leaves-10
Jaggery-2 Tsp
Gingelly oil-2 Tsp


METHOD:

Grind the coconut into fine paste..
Extract the tamarind..
Heat Ghee in a Kadai,Add the Vathal,Saute till it gets fried...
Keep it aside...

Now take some oil, Add Onions(Either whole or Chopped).. Garlic...Curry leaves...
Simmer the stove... Fry well...

Now add the Chilly powder,Dhania Powder & Salt too.,...
Add the Tamarind paste... Allow it to boil well...

Add the Coconut paste...
Add the Jaggery too...
Bring to boil...
Add to the Fried Vathal...
Yummm... Yummm
                          Vathal Kulambu ready ....

INSTANT MANGO PICKLE

                          INSTANT MANGO PICKLE
Hey Guys....

     We again confirm that Summer has come by the arrival of Watermelons.. Mangoes in the market...
Today I got a Kachaa mango,that i couldn't resist & prepared this Instant Mango Pickle...
Simple Ingredients & Less time consuming too...

INGREDIENTS:
Mango-1
Salt
Chilly powder-3 tsp
Turmeric powder-1/4 tsp
Hing-1/4 Tsp
Vendhyam-1 Tsp
Mustard-1 Tsp
Gingelly Oil-3 Tsp

METHOD:
 Cut the Mango into small pieces.
 Dry roast the mustard & Vendhayam... Powder it..

Take the Chopped Mango in a dry Bowl...
In a kadai,Take Oil..Heat it..Simmer it
 Add the Hing,Powdered Mustard & Methi,Chilly powder,Turmeric & Salt...
Pour it over the Mango pieces...
Mix well..
Keep aside for a couple of hours...
YUMMY INSTANT MANGO PICKLE ready....

Note: Always pat dry the Mangoes,Use Dry Bowl,Spoons,Ladles etc..
The more time,u leave it.. The better it is soaked & Tasty...
If u refridgerate it,Can store for more than a week...
Can add a dash of Jaggery for that Lovely sweeter taste too...

CORNFLAKES MIXTURE

Hello friends....
Hope all are doing well....
My daughter came back from school in the noon itself,because of her exams...
She was craving for some Norukks... I had only a pack of Cornflakes left out,,...
So I tried it today...
Its very simple with very few things available from our kitchen itself...
Here is the recipe for you

CORNFLAKES MIXTURE

INGREDIENTS

Cornflakes-2 cups
Groundnuts-1/2 Cups
Pottu kadalai-1/2 Cup
Cashews-6
Badam-6
Grapes-2 Tsp
Curry leaves-a sprig

Chilly Powder-2 Tsp
Salt-To taste
Sugar-1/2 Tsp

Oil- To Fry

Fry Groundnuts & Pottu kadalai,separately...
Chop the Cashews & Badam into 2-3 pieces..
Fry the Cashews,Badam & Kismis..
Fry the Curry leaves too..
Then Fry the cornflakes

Put all the fried ones in a container...
Add the Chilly powder,Salt & Sugar too...
Mix well..
Wait till it cools down..
Then store it an Air Tight Container...

You can even add Aval.. Kopra pieces.. etc too...

VAAZHAPOO BIRIYANI

My Belated Woman's day wishes to all of you....


All of you would have heard of & cooked so many Biriyanis,Veg & Non Veg..
 But Today I'm going to present you an Unique but Tasty Biriyani.... Any Guesses....??

Okies.... Its VAAZHAPOO BIRIYANI...
As you all know,Banana Flower is too good for our health Esp.for Women's Uterus....
These days We feel really Lazy to clean it & cook... But Kindly make tasty item & Switch back to our Own vegetables than English Veggies...
Ok.. Lets get into the recipe now..

VAAZHAPOO BIRIYANI

Ingredients:
Vaazhapoo-1 cup
Raw rice-2 cups
Ghee-2 Tsp
Oil-2 Tsp
Cloves-5
Cinnamon-3 
Cardamom-2
Bay Leaf-1
Onions-1 Cup
Tomatoes-1 Cup
G.Chillies-5
Mint
Coriander leaves
Salt
Dhania powder-2 Tsp
Turmeric Powder-1 Tsp
Coconut milk-5 Cups



METHOD:
 Wash rice & Soak for 15 Mins
Cut Vaazhapoo into two & Keep it soaked in Buttermilk
In a pressure Pan, Take Ghee+ Oil...
Add the Spices
Add the Onions & G. Chillies.. Fry till Pink..
Add Tomatoes...
Vaazhapoo.. Saute till Soft...
Add Mint..
Salt..Dhania powder..Turmeric powder..
Saute well...
Add the Soaked rice,saute well...
Boil the Coconut milk separately & 
add to the rice mixture...
Close the pan & Put the weight...
Cook till 2 Whistles...
Add Coriander.. Mix well & Serve with Raitha...

MOCHAI ROTTI












Hello Dears...
  Today I'm posting a different dish,which hail from my native,Dharmapuri...
  As it is near to Karnataka,Many of our dishes have the touch of their foodstyle...
  Likewise This MOCHAI ROTI,is a version of Karnataka's famous AKKI ROTI,I can say...
  But this Mochai rotti has been prevailing as our staple tiffin item in our families...
Especially,It is a better way to empty our left over rice,During Mochai season... 
 Ok.. Lets look into the recipe now...

       MOCHAI ROTI

Rice Flour-2 Cups
Fresh Mochai-1 cup
Left over Rice/Saadham-1/4 cup
Coconut grated-1/4 cup
Onion-2
G.Chillies-6
Mustard-2 tsp
Urad dhal-1 Tsp
Curry leaves
Coriander leaves
Salt
Oil

Boil the Mochai...
In a kadai,Take a tsp of Oil,Add Mustard,Urad dhal... Let it splutter... Now add The Onions,G.Chillies..Saute till color changes..
Add Curry leaves,Coriander too...

In a broad vessel Take rice flour,Add the boiled Mochai to it... Add salt..Mix well.

Add the sauted onions... Grated coconut.. Saadham..
Mix all well...
Now add Hot water to this.. Mix with a ladle well... 

Once it warms down... Knead well with your hands to make a soft dough..
Make Balls...
Flatten it with your palms on a greased Plastic sheet or Plantain leaf...  
Transfer it to the Hot tawa,Cook both sides well till it is done &roasted...
Tasty Simple Mochai roti is ready...

You dont even need a Side Dish for this...
If you really want,You can serve it with Any Chutney or Kuruma,As well

DRUMSTICK FLOWER PORIYAL

Hi Guys...
 You people would have cooked Drumstick Veg.. Its Leaves etc...
  How many of you tried MURUNGAI POO.....????
This Murungai is called Moringa Oleifera or Also known as Golden Shower Tree...
This Murungai is Fully rich with all essential Vitamins,Proteins,Amino acid,etc...
A speciality about this is- It suits for both Obese people &  Malnutritioned,as well... Isnt it Great..??
How can we miss Such a nutritious Nature's Gift..
Lets kick start with a Tasty recipe....

Some of you would have done Murungai Poo koottu or Pachadi...
But this is Traditional dish made at our home.. By my Mom. Nirmala Gunaseelan..
Tastes like Egg poriyal...
Lets look into the Recipe.

MURUNGAI POO PORIYAL

Ingredients:
Murugai poo-2 cups
Onions-1 cup
 Garlic-4 pods
                       Coconut -1/2 cups

Salt
Chilly powder-1.5 tsp
Dhania powder-2 tsp
Turmeric Powder-1/2 tsp
Oil-1 tsp
Mustard-1 tsp
Urad dhal-1 tsp
Curry leaves
Coriander leaves

Wash the poo well...
In a Kadai Take oil.. Add Mustard.. Urad dhal.. Let it Splutter..
Now add Chopped Garlics,Then Chopped Onions.. Fry till Pink..
Now add the Poo.... Fry till it shrinks well ...
Now add the Dry powders... Saute well in medium flame...
You can sprinkle 1/2 cup of Water for the Poo to get cooked well...
Once cooked..Add the Grated coconut.. Mix well..
At the last stage,Add the Curry leaves & Coriander leaves.. 
Doesn't this look inviting....????
Its easy to make ,Right...????

POTTUKADALAI SWEET

Hi Guys... How are you all..???? 
As today is My mom's Bday ,Let me post a Sweet here....
It is packed with high Protein & Yummy too...
When I was pregnant,My Doctor adviced me to consume more of Paruppu,Which I dont like much... So My Father in Law suggested me to eat Kadalai Mittai or This Maa laadu,As This too is Protein rich... 
And So carried  my pregnancy with Kadalai Mittai.. Banana & Milk....
So Lets Proceed to this Tasty Sweet...


 POTTUKADALAI SWEET

Pottu kadalai-1 cup
Sugar-1/2 cup
Ghee-1/4 cups
Cashews-5
Elaichi

Dry roast pottukadalai till flavor comes out...
Powder it in a mixie..
Powder the sugar too
Sieve both together..
Fry the cashews broken into small pieces..
Add the elaichi powder too...
Heat Ghee.. Add when still Hot.. Mix well with a ladle...
Start making balls when Warm itself...
Can store in Air tight container & relish it...

It very tasty.. Easy to make.. Very healthy too...
Kids will love it...
Just give a try...

For a Change.. I added more ghee &I pressed it & gave a shape...
Is it not looking Delicious...Looking like Pedas...????


SPROUTS SALAD

Healthy Sprouts Salad

We all buy or make Sprouts,But end up not eating it many a times...

Lets make a Tasty, Easy Salad...

Sprouts-1 cup
Onion-1/4 cup
Capsicum-2 tsp
Tomato-2 Tsp
Salt
Pepper
Sugar -a pinch
Lime juice
Coriander leaves

Mix all together.. Toss well & Serve...
Here you have a Bowl packed with Power to KickStart your energetic Day....

If you dont like the Raw smell & Taste..You can pressure cook for just a single Whistle,So that Nutritive values are not lost much...
But Raw sprouts are More healthier though...
