BRINJAL MASALA

 
Hello Friends,,,
Today I've come up with my Ever Favorite Kathirikaai Masala...
When I was in Schooling,
My mom used to make lovely  Kathirikaai Masala,Drizzled with lots of oil...
But Now I use less oil & cook it ,Sprinkling water...
Now My daughter loves this with Dosas, rather than in her lunch...
Who would not love HomeGrown Veggies...
This time , I got this lovely Green Pinju Kathirikaai from
my Beloved Friend Kavitha Muthu's Garden...
It s irresistable to cook & gulp it with my Favorite Dosas...
Why don't you people try this dish too ...????
It goes well with Rice,Variety rice ,Even with simple Curd rice
Shall we proceed to the recipe now....!!!!

BRINJAL MASALA

Ingredients:
Oil-2 Tsp
Cloves-3
Cinnamon-2
Jeera-1 Tsp
Onions-2
Tomato-1
Garlic-6
Chinna Kathiri kaai-200 gms
Dhania Powder-2 Tsp
Chilly POwder-2 Tsp
Turmeric powder-1 Tsp
Salt-To taste
Curry Leaves
Coriander Leaves

METHOD:
 In a kadai,Take Oil,Add Jeera,Cloves & Cinnmon,Let it splutter..
Add Chopped Onions... Garlic... Fry well..
Then add Chopped Tomatoes...
Add the Thinly sliced Brinjals too... Saute in Medium fire...
Saute well....
Sprinkle some water....
Close the kadai & leave it to cook..

Add Dhania powder, Chilly pow,Turmeric, Salt.. 
Saute well...
Add Coconut Paste,Oil...
Fry till red...
Mix well...
Garnish with Curry leaves & Coriander leaves..
Serve Hot..


Can serve with Rice & Dosa too....

POONDU KULAMBU




Hi everyone...
After the heavy rains,Winter is around us...
This recipe is apt for this climate..
I personally prefer Puli Kulambu or Masala kulambu than Sambar..
So I collect recipes from all over...
This particular recipe is from my Close friend,Bhuvana from Karur...
We all love the Spicy,Tangy flavour & taste of this Kulambu...
And a special mention is- It is  suchhh... an easy kulambu,Which You can make in a jiffy...
As,I'm in Food groups in Facebook,
Today,When I shared my Menu, Many started asking the recipe for this.,..
I thought,I ll input the recipe here for all of our benefit...

Shall we jump into the recipe,Now..

INGREDIENTS:
Oil-2 Tsp
Garlic-20
Sambar Vadagam
Sambar Vadagam-1 Tsp
Chilly powder-2 Tsp
Dhania powder-1 Tsp
Turmeric- 1 Tsp
Salt
Tamarind- Lime sized
Jaggery-1 Tsp
Curry leaves
Coriander



METHOD:
Take oil in a pan,add Vadagam,
Then Full Garlic pods... Fry it well in oil,Till it gets cooked,
Can even sprinkle 1/4 cup of Milk to cook soft & tasty...
Now add the Chilly powder, Dhania Powder,Turmeric,salt,Simmer & Saute well...
Add the Tamarind pulp,Boil well,
Add a Dash of Jaggery
Give final touch with Coriuander & Curry leaves too..  
Serve hot with White Rice & appalam is a good Combination...

MAIDA HALWA



Hi all....
Many of u,may love sweets,But I don't have a sweet tooth...
Still some times,I too have a craving for sweets,That last week for my anniversary,
This MAIDA HALWA was my Neyar Viruppam,to my Mom...
She is an expert in this,,,,
She is making this after a very long time,I guess...
In those days,We don't have much sweets shops to buy Sweets,When guests arrive surprisingly...
Along with Kesari,Bajji,Bonda,This Maida Halwa,Used to come handy for them...
My Cousin Ramu anna's Favorite is this Halwa,
I remember,My mom making it Hot,Hot for him for lunch...

Its very easy,Yet Tasty sweet...
You can give a try...
Shall we jump to the recipe now...????


INGREDIENTS:
Maida-1 Cup
Sugar-1 Cup
Water-1/2 Cup
Ghee-1/2 Cup
Cashews-10
Kismis-20
Cardamom powder-1 Tsp
Salt-A pinch

METHOD:
First Fry the Broken Cashews & Kismis in little Ghee & Keep aside...

Take a plate & grease it with Ghee generously...
Take Maida in a Bowl,Add little water & Mix it without lumps like Idly batter consistency..

In a Broad , Heavy bottomed Pan or Kadai,
Take the Sugar, Add 1/2 Cup Water.. Boil it,Till you get String consistency...
Now add the Maida batter to the Sugar syrup,Keep mixing...
Add Ghee little by little..
Keep stirring all the time in medium flame...
Add the Fried Cashews,Kismis,Cardamom powder,Salt.. Give a mix...
When it leaves the sides of the pan, Transfer it to the Greased Plate... 
Let it cool down for sometime,Then cut into pieces or even Scoop out & serve...

KADALAI MAAVU DOSAI / VEG OMLETTE



Hello Friends...

I love Dosas... What about you...???
Our South Indians are famous for our Idly & Dosas,Right...
Everybody at home,Loves Dosas...
This Dosa taste like Egg, So its also called Vegetarian Omelette...
When you add array of Vegetables,It becomes Vegetable omelette..
But I like it,Just as Regular Dosa..
One more thing,.. It doesn't need any fermentation also ...
Isn't it interesting to know that...???
Lets peek into the recipe now...


INGREDIENTS:
Besan/Kadala Maavu-2 Cups
Rice Flour-1 Cup
Salt
Water--2 Cups

 
Oil
Mustard-1 Tsp
Urad Dhal-1 Tsp
Channa dhal-1/2 tsp
Onion-1
G.Chillies-5
Curry leaves-10
Coriander leaves- little


Ginger-1 Pc
Garlic-5
Saunf-1 Tsp
Grind these 3 Ingredients..


METHOD:

Mix both flours with salt... Add enough water,Mix it without any lumps...
Add the ground Paste...
In a Kadai,Take some oil,Add Mustard,Urad Dhal,Channa dhal... once it splutters,
Add the chopped onions,G.Chillies,... Saute till it turns pink..
Off the stove & add the curry leaves & Coriander too...
Adjust the consistency with required water... 
The batter can be quiet thin & Flowy...thicker than Rawa Dosa batter...
This Dosa doesn't need any Fermentation... Its an instant one...

Now ,Take a ladle of batter & Pour it on the heated Dosa Tawa,Sprinkle oil all the sides...
Turn it up & Cook till both sides are done...
This Dosa is very tasty,Crispy ones also...
This Dosa doesn't need any side dish also... 
You can as well serve it with any Chutney or Sambar...
Try it out & See...
You can add Chopped Veggies like Carrot,Beans,cabbage etc..
For a slight variation,Add 2 Beaten Eggs & Try too...

KAMBU MURUKKU

Hi Friends...
Diwali is heading fast...
All of you will be planning to make Sweets & Savouries for the festival...
But Many of us,Try getting from shop,Thinking its very difficult to make at home...
Its not so...!!!
Only a few pre preparations & patience will do...

Today I was speaking to my Friend Jayanthi,And we were both in Nostalgic memories of those days Diwali...
Those were the days ,We used to celebrate the festivals with full Josh & simplicity , yet It was very merry ful...
Its really wonderful memories of Dabba full of Sweets & Murukkus....,
Exchanging those Homemade snacks with relatives & friends...
Wishing Friends & relatives over Phone(STD Calls)...
Sending Hand drawn Diwali Cards..
Large colour Kolams, New dresses, Crackers.No much TV, But lots of small happiness,
These days We spend a lot on Snacks, Dresses & Crackers , But still I feel the Joy has reduced...
Those were the days,Spent with real Bliss.... :-)...
Ok...
Now Being a Foodie,I thought , Let me at least try to make few snacks at home...
As Millets are very much in talk these days,as it is a healthier choice,
I tried out this Murukku & It turned to be crispy, tasty & Healthy too...
Lets jump into the recipe now...

                                                         KAMBU MURUKKU

INGREDIENTS:
Kambu Maavu-1 Cup
Gram Flour-2 Tbsp
Fried Gram Powder-1&1/2 Tbsp
Chilli powder-2 Tsp
Salt- To Taste
Hing-1 Tsp
Omam-1/2 Tsp
Jeera-1 Tsp
Til-1/2 Tsp
Hot Oil-2&1/2 Tsp
Water-1/2 Cup

Oil-To Fry

METHOD:
Mix all the ingredients except Oil well...
(You can mix all the dry ingredients & store for later use too)
Now add the Hot Oil,Mix lightly with your fingers..
Add water , Knead well to make a dough..
Heat the oil in a Kadai..
Roll the dough into cylindrical shape & put into the Murukku press or Achu...













Press it to make Murukkus on a clean towel...
The oil should be hot,that if you drop the dough,it should immediately raise to the top of the oil...
Now slowly drop the murukkus into the hot oil..
Cook it flipping in the middle,Till the Oil's Sizzling sound stops..
Repeat with the remaining dough too...
Your Easy,Healthy,Tasty,Crispy Murukkus are ready....

For 200 gms of Flour,You get 12 medium sized Murukkus...

HEALTH TIP ----- OMAVALLI TULSI VETRILAI JUICE for KIDS COLD

Climate is becoming Chill & Rainy these days...

All of us suffer of Cold.Cough & it may lead you to Fever & other ailments too...

It is really irritating & tough to manage Kids with Cold..

These days, Doctors prescribe Higher Anti-Biotics,Which is not advisable to have it often,Even for a Simple Cold....

We In our family, Always start our treatment with Veettu Vaidhiyam ...

Very important among those is this Omavalli,Vetrilai,Tulsi Kashayam...

We can give it even for Infants..

 (Don't use the word,Kashayam,Use Juice insead...;-)...)

My daughter loves this Juice a lot...

Very easy & effective...



INGREDIENTS:


Tulsi-1/2 Cup

Omavalli/Karpooravalli-10

Vetrilai / Betel Leaves- 3



METHOD:


Wash all the leaves...

Take it in a Plain Kadai,Saute it in low flame...
 
When it starts becoming soft &  leaving juice,Say in 2 Mins,Off the stove..

The aroma will be too good..

Once,Little cooled down,Take those sauted leaves in your palms...

Place your other palm on it... Twist both your palms,Crushing the leaves in between..

Because of the heating process,The juice starts oozing out easily...



 








Collect it in a cup & give your Kids...

Repeat it Twice daily for atleast 3 or 4 days...

Its very effective & Safe also...

Elders can munch these leaves for Cold relief..

CHILLI CHEESE CORN TOAST


 Hello Friends..
 Deciding menu is tougher than Cooking for me & most of us...
Its always boring to repeat the menu.. Isn't it...???
Though We love South Indian Breakfast items- Idly,Dosa etc.. I try to vary my menu..
We regularly have Bread as Breakfast, atleast once in 10 days,
I try out different variety in Bread,,..
This time,I'm coming up with this Easy Chilli Cheese Corn Toast...




INGREDIENTS:
Bread-4 Slices
Corn-1 Cup
Mozerrello Cheese-2 Tbsp
Butter-2 Tsp
G.Chillies-4
Capsicum-1/2
Onion-1
Celery-2 Twigs
Mushrooms-2
Pepper powder-1 Tsp
Chat Masala-1 Tsp
Salt-To Taste


METHOD:






Its just as simple as ever, 
Take all the ingredients except Bread & butter...
Just give a mix...



 
Take the Bread Slices, Apply Butter on both sides,
Then Place 2 Tsp of this Mix...
Now you can Place it on Dosa Tawa or toast In your Oven,Till the Cheese melts...
I toasted it in my New OTG,in 150*C for 4-5 Mins...
Easy,Healthy,Tasty,Appetising Cheesy ,Corn,Chilli Toast is ready...
Serve it with Tomato Sauce...

 
 Its a good recipe either for Breakfast or even Evening Snacks for your Kids,
Who come back tired from school....

CHILLY EGG - SCHEZWAN EGG FRY


Hello people...
Have you ever tried Fried Egg recipe..?????
Though I don't take Eggs, Both my Husband & Daughter are very fond of Eggs,So I try out different types of Omlettes & other Egg recipes,,..
Whenever We visit Hotel Hemala in our place-Karur,Both of them order Chilly Egg,Chinese Style...
I've been thinking of making it at home, for quiet a few months,But Didn't put my hands though...
But My Sweet FB Friend,Famous Blogger Jillu Anand of Jiya's Delicacy shared her version of Fried Eggs & I too followed her recipe & it came out awesome... 
Let me share it with you all here...


CHILLY EGG,CHINESE STYLE

INGREDIENTS:
Boiled Eggs-4
Maida- 2 Tbsp
Cornflour- 2 Tsp
Salt
Chilly paste
Ajinomoto-1 Pinch
Soya sauce-2 Tsp
Oil-To Fry


Oil-1 Tsp
Onion-1( Cubed)
Sugar-1 Tsp
Salt- To taste
Red Chilli paste-1/2 Tsp
Pepper-1 Tsp
Soya Sauce-1 Tsp
Spring Onions- To garnish








METHOD:
In a Bowl,Mix Maida, Cornflour, Salt, Chilli paste, Soya sauce, Ajinomoto ... 
Mix well adding few drops of Water...
Add the Boiled Eggs,Cut into 4 pieces-Quarters...
Let it marinate for an hour.

Deep fry it in enough Oil..

Again Take a Non Stick pan,
Add oil,Onions.. saute till pink,
Add Red Chilli paste,Pepper,Soya sauce.. Quickly saute all..
Sprinkle Salt & Sugar too...
Add the fried Eggs...
Dont mix too much,It may break... 
Garnish it with Spring Onions & serve Hotttt,.......
It goes well with Noodles,Fried rice etc or just as a starters or Snacks too...

MASALA PURI - North Indian Chat



Its nostalgic memories,I get when I think of North Indian Chats,
Those days When We used to visit Marina Beach during my school  Holidays ,These chats , Molagaa bajji & Chocobars were in our list...
Later,During My College days,we used to have these chats in Fountaiun Plaza,Small Shops & also in AJNABI,... My Goddd... Euphoric memories...... :-)
Now my daughter too loves this Masala puris,Not the one We get in our Hotels,These days with Channa kuruma...
Green Peas gives the taste... 
Try this makkale...




GREEN CHUTNEY: 
Coriander-1 Bunch
Mint-1/2 Bunch
G.Chillies-5
Salt
Lime juice-2 Tsp


Grind Coriander,Mint,G.Chillies,Salt together, adding little water..Add lime juice & Keep aside.



 SWEET CHUTNEY:


 

Jaggery- 1 Cup
Dates-10
Chilly Powder-2 Tsp
Salt- 1 Tsp



Grind Soaked Tamarind, Jaggery, Dates with Salt & Chilly powder...
Boil it & strain it.. 


MASALA:
 Ingredients:
Green Peas- 2 Cups
Onions-2
Tomatoes-2
Dhania powder-2 Tsp
Turmeric-1 Tsp
Salt-To taste
Oil
Coriander Leaves 


Puris
Jeera Powder
Chat Masala powder

Soak the Green Peas Overnight,
Next day Pressure cook it with Salt for 7-8 Whistle..

In a Kadai,. Take Oil,Add Jeera,Onions,Tomatoes...
Add the Boiled Green Peas, Smash it well..
Add Dhania powder,Salt,Turmeric...
Add Coriander leaves too..
 
Grate Carrots
Chop Onions & Tomatoes
Take Puris & Sev- Omapodi
I buy the Sev & Puris , As I dont have that much patience

In a Plate,Take 6 Puris,Break it,Put a ladle of Masala on it,
Add Green Chutney & Sweet chutney according to your taste,
Sprinkle Jeera Powder,Chat Masala too...
Garnish with Grated Carrots,Onions,Coriander leaves,Sev...
