TOMATO PACHADI

 Hi People,
Its scorching hot Outside.,Who only will love to burn inside our kitchen..
So Its better to finish your cooking early & relax...
Its always healthy to have lots of Fluids,Veggies & fruits in Summer right...???
Here I come up with a Easy Peasy Tomato Pachadi..
Its my Hubby's favorite recipe,my mom makes for him..
Its rich in Vitamin C,Minerals & will love it for the Tangy taste too....

As I said,You can make it in a Jiffy...
Lets look into the recipe now...

INGREDIENTS:

Oil-1 Tsp
Mustard-1 Tsp
Urad Dhal-1 Tsp
Onions-2
Garlic-4 Cloves
Tomatoes-4
HIng-1/2 Tsp
Dhania powder-2 Tsp
Chilly Powder-1 Tsp
Turmeric Powder-1/2 Tsp
Salt-To taste
Coconut-2 TSp
Jaggery-2 Tsp 
Coriander leaves
Curry leaves


TOMATO PACHADI


Heat oil in a kadai,Add Mustard,Let it splutter.. Urad dhal.. Hing..Curry leaves..
Then add sliced Garlic-4..
Then add  Chopped Onions... Saute well..
Then add Chopped Tomato.. Fry little..
Now add Turmeric powder, Dhania powder.. Chilly powder.. Salt..
Add a cup of Water.. Close,Simmer & Cook till soft..
Add the Grated Coconut..
Finally Add Jaggery..
Garnish with Coriander leaves...

Goes well with Rice, Dosa, Idly, Chapathi too....

VEG CUTLET





 Hi  Pals...
Today I made Yummy,Veg Cutlet,which I'm sharing my recipe...
Way back in 80s,during my school days,There were No Restaurants or Hotels
 to visit & have like these days...
Esp For ladies,That too in our family...
I remember only in late 90s,We dared to get permission from our granny &
go to a Family Restaurant with Whole family...


 Coming back to Cutlets,In those times,We have not known about these foods,
But Vadai,Bajji,Bonda,Murukkus were our Savories...
But in Late 80s,Once both my sisters joined in Chennai Ethiraj College &
put up in Rani Meyyammai Hostel...
We came to know so many Foods like Cutlets,Sandwiches,Burger,Dough Nuts,,
Like that It all started-our Craving for variety food-I Guess... ;-)
This recipe was learnt from our Hostel's cook by my Elder sister,Chitra akka...
which,we still follow...

This is as usual a Easy,yet Yummy one...
 Today,My daughter Sanjana & her Friend Shreya were busy preparing for their Tomorrow's Exams..
I thought I' ll treat them with this Appetizing Cutlets...
And Ofcourse they both relished & My friend Jayanthi Kasturi too appreciated it,...
Now lets look into the recipe...




INGREDIENTS:

Potato-4
Carrots-2
Beans-100 Gms
Onions-2
Bread-3 Slices
Chilly Powder-2 Tsp
Salt
Dhania Powder-2 Tsp
Coriander leaves

Maida-1/2 Cup
Water-1 Cup

Powdered Rusk -2 Cups

Oil

METHOD:
Boil Potatoes,Peel & Mash it...
Boil Carrots & Beans..
Chop Onions..
Immerse Bread slice in water,Squeeze the extra water..
Mix Maida with water & little salt,To a thin Batter...
Powder the rusk...

Now,Take Mashed Potatoes in a broad vessel.Add Carrots,Beans,Onions
Bread slices... Dhania powder,Chilli powder,Salt..
Bind everything together...
Make Balls...
Flatten it into Tikkis...
Dip it into Maida batter..
Put on the Rusk powder & roll it well...

Take little extra oil in a Pan & Shallow fry the Cutlets,Till both sides are done & golden Brown...
Serve Hot with Tomato Ketchup...
Its a Easy,Yummy Snack for everyone at home...

CHAT-PANI PURI,MASALA PURI,SWEET & GREEN CHUTNEY









 KHATTA MEETA CHUTNEY

SWEET CHUTNEY
  • Jaggery- 1 Cup
  • Dates-10
  • Tamarind-A ball sized
  • Chilly Powder-2 Tsp
  • Salt-1 Tsp

  • Grind ,Soaked Tamarind, Jaggery, Dates with Salt & Chilly powder...
  • Boil it & strain & Keep aside....
  •  
  • GREEN CHUTNEY 
  •  
  • Coriander-1 Bunch
  • Mint-1/2 Bunch
  • G.Chillies-5
  • Salt
  • Lime juice-2 Tsp
  • Roasted Jeera powder-1 Tsp
  • Kaala namak-1 Tsp
  • Amchur Powder-1 Tsp
  • Water-4 Cups
  • METHOD:
  • Grind Coriander,Mint,G.Chillies,Salt together, 
  • Adding little water..Add lime juice,Jeera powder,Kaala namak,Amchur powder..
  • Add 2 Cups of water to the Chutney... Mix well & Keep aside.
  • This is the Pani for Puri
  • For Filling:
  • Boiled Potatoes-2
  • Sprouts-1/2 Cups
  • Chilly powder-1 Tsp
  • Salt-1 Tsp
  • Mix all together..

  • Puris-1 Pack (I got readymade Puri Packets)
  • Sev-1 Cup
  • Pori/Puffed Rice-1/4 Cup
  • Carrots-1 Cup
  • Onions-1
  • Tomatoes-1 Cup
  • Cucumber-1( Optional)
  •     FOR SERVING
  • Make a hole in each Puris, Fill with some mashed  Potato & Sprout mixture,,
  • Then,Carrots,Onions,Tomatoes,
  •  Little of Sweet Chutney(Optional)
  •  Sprinkle  Chat masala...
  •  Serve it in a plate with a Bowl of Pani...
  •  Dip each puri in Pani & gulp it...

SOYA KURUMA

Hi guys...
Today I made Soya Kuruma,Which is my Hubby's favorite...
As Our Friend came for lunch... I made this..
This recipe was basically from Menu Rani Chellam's Cookery show...

When I shared my Lunch pics in FB Food groups,many of my friends asked me to share my recipes,
So I thought of saving it here ,Which will be useful to all....
This Kuruma goes well not only with White rice,But also with Chapathis,Rotis,Dosa, Aapam etc...

Ok...Shall we jump to the recipe now...???




INGREDIENTS:
Soya Chunks-2 Cups
Oil-1 Tsp
Onion-2
Tomato-2
Saunf-2 Tsp
Ginger,Garlic Paste-2 Tsp
Turmeric-1 Tsp
Chilly powder-2 Tsp
Garam Masala-1 Tsp
Coconut paste-1 Cup
Coriander leaves

To Grind:
Cloves-2
Cinnamom-1
Cardamom-1
Cashews-8
Khus Khus -2 Tsp
Tomato-1

METHOD:
Soak the Soya Chunks in water & Boil it in hot water..

In a kadai,Take Oil,Add Saunf,Onions,Tomatoes... Saute for a couple of mins...
Add the ground paste,Boil it...
Add Ginger,Garlic paste,Turmeric,Chilly & Garam masala,Salt...
Now add the Cooked Soya chunks..
Finally add the Coconut Paste & bring it to boil...
Garnish with Coriander leaves..
Its a simple ,yet  Tasty dish..
