MYSORE BENNE MASALA DOSAI


Hello Everyone,
Howz Life...???
Today We are gonna see a Spl Item,
What else than a Dosa,in my Blog...??

Whenever We go to restaurants,I end up my choice with a Dosa,
All hotels have a different taste of  Dosas..
But The one I love Ever is ,Mysore Butter Masala dosa of Karnataka...
My dad always used to Say,
Mangalore Mohini Vilas was the people who invented this particular Dosa..

Though,I love this,I have not tried So far...
It was always in my list to try...
Last week only,I tried it & it was Awesome.... :-)
All of us loved it so much..


The Crispy dosa,With The Red Chutney applied &
Potato Masala Kept inside & Rolled,Drizzled with a Dollop of Butter on it,...

Wow.... Wow....
For a Foodie...This is the ultimate Bliss,to Relish on a Relaxed Morning or Evening...

My daughter loved it so much,that She wants this Dosa regularly instead of Normal Dosa...

I bet,The Crispy,Tasty,Colourful dosa will sure steal your heart too....

Let me proceed to the menu...

         

 MYSORE BENNE MASALA DOSA


INGREDIENTS:

FOR BATTER:

Raw Rice-1 Cup
Parboiled Rice-1 Cup
Urad Dhal-3/4 Cup
Chana Dhal-1/4 Cup
Tuar Dhal-1/4 cup
Methi-2 Tsp
Soak all this together for 3 Hours..

Poha-Beaten Rice-1/4 cup
Soak this just for 1/2 an hour..

Grind Poha first,Then Grind the Rice & Dhals together to a slightly coarse paste..
Add salt,Mix well & let it ferment atleast for 8 Hours..


After 8 Hours...The fluffy Batter is ready,
U can Check ur consistency,
If Batter is thick.. Can add little water to make it loose...

RED CHUTNEY:

The best part of the Mysore Masala Dosa is the Red Chutney...


Chana Dhal-4 Tbsp
Red Chillies-8
Small Onions-5
Garlic-4
Salt
Tamarind-Very little(Optional)
 Saute all this with little oil,Cool & Blend it...



POTATO MASALA:

Oil-1 Tsp
Mustard-1 Tsp
Urad Dhal-1 Tsp
Garlic-4 Crushed
G.Chillies -4 Slit into2
Onions-1 Cup
Potato-2 Cups (boiled ,Peeled & mashed)
Tomato-1
Salt-To taste
Turmeric-1 Tsp
Dhania powder-2 Tsp
Cashews-5 (Broken & Fried in Ghee0
Curry Leaves-Little
Coriander leaves-Little

Heat Oil,Add mustard & let it Splutter,Then add Urad dhal,
Curry Leaves,G,Chillies,Garlic,Onions,Tomatoes..
Saute for a while.. Then add the Mashed Potatoes,Salt,Turmeric,Dhania powders..
Add little water & Cook well..
Finally add the Coriander leaves
Add the Fried Cashews too...

 Making of Dosa...


The batter will be quite fluffy,
Just take Ladle full of batter,Pour on  a heated Tawa & Spread with the ladle...
Keep the flame in low,Close & Cook it...
No need to flip it..
Drizzle few drops of oil..
Once it turns red,Apply little chutney,Spread it...




Keep a Tbsp of Potato masala,
No need to spread it,
Just roll the Dosa or just Fold into half,
On top of the Dosa, keep a Dollop of Butter..
The butter gets melted by the Heat of the Dosa & it is so inviting...


BENNE is nothing but BUTTER,VENNAI.... ;-)



The Dosa with Chutney & Masala is yummy by itself ,
But can enhance it by serving Sambar along with it...

As You all know, Karnataka Sambar & Our Arachu vitta sambar has a tint of sweet taste,
Which goes well with this...

MADHUR VADA



Hi Friends...
Hope you all enjoying the festive season...
We Indians are so lucky that we celebrate Festivals often..
From Aadi Perukku,It starts Festive season like 
Varalakshmi Viradham,Gokulashtami,Pillayar Chathurthi,Onam,Navrathri Golu,Ayuda pooja,Vijaya Dasami,Followed by Diwali,Deepam... Goes to Pongal...
Our Elders have found a way to celebrate life...
With the name of  God & religion,Our Ancestors have charted down every month with a Spl day...

Esp.The Golu makes as Feel happy meeting so many people,Engaging ourselves & keeping away from our routine...

My recipe today is a Instant Vada..
It is called MADHUR VADA...



It hails basically from Karnataka from a Village called Madhur,I heard..
When We enter Karnataka in trains,That too early in the morning,
The Aroma of the Vada & look of its crispiness,The Browned Onions in it,
draws us to the vendors , get few & gobble it...
It was in my list,for very long time & recently tried it,
When My sister dropped in home...

It is a very easy & simple dish,
Which you can make in very less time...
No need Soaking or Grinding too....Voila....

Let's jump into the recipe....

MADHUR VADA 

Ingredients:

Maida-1 Cup
Rice Flour-1 Cup
Rawa-1/2 Cup
Salt-To Taste
Onions-2
G.Chillies-3
Jeera-1/2 Tsp
Hot Oil-2 Tsp

Mix all the ingredients together,Except Oil...
Heat the oil,Add to the flour... Mix & crumble it...
Sprinkle water & knead slowly to form a stiff dough...
Leave it for 1/2 an hour or so... 

Make balls..
Take a ball on your Greased Palms,flatten it with your fingers,into thin Vadas...
Deep fry in hot oil,till Brown...

You can have it like this itself or serve with Coconut Chutney or Tomato Ketchup..

CHEESY VEG SANDWICH

For us,Ladies, Daily confusion is on deciding the daily menu....
Don't you feel so...???
So,I try to follow a menu list...

Every sunday, For Breakfast,I stick on to Bread ,These days...
It is a comfort food,Yet tasty...
I try to present my Sunday Breakfast with variations,Like
Bread Omlette,Sandwich with Mint Chutney & Salad,
 Chilly Corn Toast,Bread Toast,Bread-Butter-Jam...



Recently ,We had this VEG CHEESY SANDWICH in a Chat shop in Karur,Paying 50+ bucks..
I tried the same recipe at home & we loved it...

This week,When My Close friend Brindha Anandvel,
dropped in Our home,with her Family,
I served her with this Sandwich,....

Now,I'm sharing the recipe with you all,here...



Ingredients:

Bread Slices-8
Mozerello Cheese-1Cup
or
Cheese SliceS-4
Butter-4 Tsp


Carrots-1
Capsicum-1/2
Onion-1/2
Tomato-1
Cucumber-1/4
Sprouts-1/2 Cup

Tomato Sauce-4 Tsp
Salt-1 Tsp
Pepper Powder-1 Tsp



Finely chop the veggies, Add Salt,Pepper & give a Mix...
I used this SIGMA CHOPPER to chop it finely.. :-)

On a slice of Bread,Apply Butter,Keep a Tsp of Veggies,
Splash a dash of Tomato Sauce
Place Some Grated Cheese or A slice of Cheese..
Close with another slice of Bread..
Give a Gentle Press..
Apply some butter on top,Place it on Tawa in Low Heat...
Cook well,Flip it around...

I toasted it in my OTG Oven for 2 mins....

Cut it diagonally & serve hot..
Can serve it with Mint Chutney or Tomato Ketchup of ur Choice too...

SWEETCORN STUFFED TIKKIS



Hi Friends,
Nice to catch you all after a long time…
Whatsapp & FB groups & my laziness is the culprit for late…
I’ve been Making & clicking, so many food these days,
 But Hardly I sat , wrote & posted here…
When Our kids are at home, We always get fed up making Snacks,
 Need to update ourself .. Right…???

I always used to make Veg Cutlet & Aloo Tikki, For my daughter,
This time I tried a variation.. Sweet Corn Stuffed Tikkis,,..
Tikkis are Street foods of Mumbai.. You can make Variety in it..
This version is a easier,Different ,Healthier one too..
You can Deep fry it,But I shallow Fried it,Yet It was so tasty…



Shall we look into the recipe…???


For Tikkis
Potato-3
Onions-1
Dhania Powder-1 tsp
Chilly Powder-1 tsp
Salt-to taste
Coriander leaves-Little

Corn Tikkis Filling
Sweet Corn-1 cup
G.Chillies-2
Ginger-1 pc
Chat Masala-1 tsp
Chilly powder-1/2 tsp
Salt-To taste
Coriander leaves-Little

 Oil-For Frying

First In a Mixie,Blend, Sweet Corn,G.Chillies,Ginger,Chilly Pow,Chat masala,Salt...
Just whip it for few seconds,No need to grind fully..
Add some fresh Coriander leavesto it..
Keep it aside

For Tikkis, Boil Potatoes,Remove skin & mash it well.
Add Onions,Chilly powder, dhania powder,Salt & Fresh Coriander leaves...
Mix well to form a dough...

Now Take the Potato mixture,Make balls,Flatten it to make Tikki,
In the centre Keep a Tsp of the Sweet Corn Filling,Close from all sides,
Gently press it to form a Tikki Shape...

(Tikkis Dont need any Coating of Flour,Bread crumbs or Rusk Powder...)

Now Your Stuffed Sweet Corn Tikkis are ready to jump into the Oil...

You can Deep Fry or Shallow fry it...

I just Shallow fried it...
Gently drop the tikkis in oil,,Cook in medium flame
Slowly flip & Cook the other sides too..
It ll turn Reddish,Crispy..
 

Can serve it with Tomato Ketchup.. Mine was with Mayonnaise..

HOTEL STYLE ARACHU VITTA SAMBAR

Howz life...???
Being Food Lovers,We all love to eat variety of Foods,Taste & try it....
But whatever choice we get, Our Tongue longs for our traditional food only,Right...???
Being South Indian,We all love Idly, Sambar, Dosa, Chutneys, Masala, Pooris....
Our Idly & Sambar Combo is Evergreen one & Complete planned Food...
Very healthy one...

Though,We make many side dishes for Idly,Sambar is the Best combi...
Esp Hotel Style,That too RATNA CAFE SAMBAR, Ratna cafe is situated in Triplicane in Chennai, Heard,It was started somewhere in 1948...,That too by a North Indian Family...
Still They have a Brand Name with lot of stylish Outlets,I heard...

My Dad never fail to have Idlys there, During each & every Chennai visit by him...
Whenever, I make this Sambar, He ll sniff with the smell & enter the kitchen..
Pour the Sambar , Generously on the Soft Idlys,
Drizzle a drop of Ghee & sprinkle few Onions  & relish like anything...
Whenever I make this now,I miss My Dad.. :-(
Nostalgic...
By Yesterday,Its Whole 6 Years,Since My dad Left us...
I dedicate this Post to my Loving Dad, Dharmapuri- R.Gunaseelan...


Lets see the recipe..

INGREDIENTS:

Toor Dhal-2 Cups
Methi-1 Tsp
Turmeric powder-1/2 Tsp
Garlic-2 pods
Small Onions-15
Tomato-2
Drumstick or Pumpkin - Few pcs
Tamarind-Lime size ball-Soak in water & take extract
Curry Leaves
Coriander Leaves
Oil-2 Tsp
Salt-As required
Jaggery-3 tsp

For Paste:

Chana dhal - 2 Tsp
Whole Dhania -2 Tsp
Red Chillies -10
Pepper -2 Tsp
Jeera -2 Tsp
Methi Seeds-1 Tsp
Dry Coconut-2 Tsp

Dry Roast all these items,Separately,Grind in a mixie with little water..
(Can grind as Coarse powder & stock it also,Can be used within 15 days)

METHOD:
Pressure cook,Tuar dhal with Methi,Turmeric & Garlic with Water.... For 3-4 Whistles..
Once Cooked, Mash it well with a ladle...
Add Onions,Tomatoes,Veggies ,Salt- Again pressure cook for JUST ONE WHISTLE...
Now add the Tamarind Paste,Let it boil...
Add the Ground Paste...
Boil it..
Finally add the Jaggery & garnish with Curry leaves & Coriander leaves..

This Sambar,Goes well with Idly, Dosas, Rawa Dosas etc...

SEMIYA UPMA

Hello Everyone...
How are you all...??? How was your Summer Holidays...???? 
Mine was very busy,Hectic & hotttt....
This summer made me lazy & Sluggish to post dishes,Though I managed to make many...
 I always Keep Idly/Dosa batter in fridge handy.,
If it is over,I get tensed up,Planning what breakfast  to do,The next day...???
We prefer making Upma/Kichdi,Only at  nights,As we all have it hot...
This Semiya Upma or Bread toast/Sandwich comes handy,For instant Breakfast...
Semiya Upma is Simple,Easy,Yet tasty one too....

Let's see my way of making SEMIYA UPMA...
 

INGREDIENTS:

Oil-3 Tsp
Mustard-1 Tsp
Urad dhal-1 Tsp
Channa Dhal-1/2 Tsp
G.chillies-5
Curry Leaves
Coriander leaves
Onions-1 cup ,Chopped
Semiya-2 Cups (I used MTR Vermicilli)
Salt
Water-3 Cups
Ghee-1 Tsp

 
 
METHOD:
Heat oil in a Heavy Kadai, Add Mustard,Urad dhal,Chana dhal... 
Once Mustard Splutters, Add G.Chillies,Curry leaves,Then Chopped Onions... 
Let it fry till pinkish...
Then add the Semiya & Fry well...
Add Salt...
In a separate Pan,Take the water & boil well...
Add to the semiya,Mix well
Let it boil,Now Simmer the stove & Close the kadai...
Let it cook for just one 5 Mins...
Wait,Till all the water evaporates...
Off the stove,Give a Good Mix with a broad Ladle or Spoon...
Voilaa,Your tasty,Easy Upma is ready in a jiffy...
Sprinkle some Coriander Leaves & a dash of Ghee & serve hot...

MUSHROOM KOTHU CHAPATHI


Hello Guys,
Howz Summer going on...???
Because of the heat,We hardly like to eat proper meals ,Right....???
I make Chapathi,Veg Masala with Ragi Kool or Buttermilk for this summer...
Yesterday was Chapathi & few were left out,Didnt want to waste it,...
Though,I ve heard about Kothu Chapathi,I ve not put my hands in making it &
Thought of giving a Try & Surprisingly,
My Best Friend,Brindha,Visited us,Without any Intimation..
I served her some & She too loved it...
I thought,I ll share the recipe with u all...Friends... 

All of us & our Kids Love Parotas,Esp Hotel ones...
As we know,The Fat- Vanaspati,They add & the Flour,is too bad for health...
This Chapathi Kothu is Homemade & Less oil,No Trans Fats too...
I'm sure,U ll love it too...

Make sure ,You cut the Chapathi into thin Stripes or Juliennes...
That gives the best taste...
How to cut Chapathi Stripes...???
 Lets Look into the Recipe now...

INGREDIENTS:
Chapathi-4-Cut into stripes
Oil-3 Tsp
Onions-2
Mushrooms-4
Tomato-2
Curry leaves
Saunf-1 Tsp
Pepper Powder-2 Tsp
Salt-To Taste
Garam Masala-1/2 Tsp

METHOD:
In a Pan,Take Oil,Add Saunf,Curry leaves,Chopped Onions... Saute well..
Add Chopped Mushrooms..
Then,Chopped Tomatoes..
Saute well.
Add Pepper powder,Salt & Garam Masala...
Add the Chapathi Stripes...
Mix well...
Sprinkle some water...(Can add some Kuruma also)
Toss well...
Serve hot with some Raitha...
Simple,Yet tasty Kothu Chapathi is ready...
You can Substitute Mushrooms with Veggies or Egg also....

TOMATO PACHADI

 Hi People,
Its scorching hot Outside.,Who only will love to burn inside our kitchen..
So Its better to finish your cooking early & relax...
Its always healthy to have lots of Fluids,Veggies & fruits in Summer right...???
Here I come up with a Easy Peasy Tomato Pachadi..
Its my Hubby's favorite recipe,my mom makes for him..
Its rich in Vitamin C,Minerals & will love it for the Tangy taste too....

As I said,You can make it in a Jiffy...
Lets look into the recipe now...

INGREDIENTS:

Oil-1 Tsp
Mustard-1 Tsp
Urad Dhal-1 Tsp
Onions-2
Garlic-4 Cloves
Tomatoes-4
HIng-1/2 Tsp
Dhania powder-2 Tsp
Chilly Powder-1 Tsp
Turmeric Powder-1/2 Tsp
Salt-To taste
Coconut-2 TSp
Jaggery-2 Tsp 
Coriander leaves
Curry leaves


TOMATO PACHADI


Heat oil in a kadai,Add Mustard,Let it splutter.. Urad dhal.. Hing..Curry leaves..
Then add sliced Garlic-4..
Then add  Chopped Onions... Saute well..
Then add Chopped Tomato.. Fry little..
Now add Turmeric powder, Dhania powder.. Chilly powder.. Salt..
Add a cup of Water.. Close,Simmer & Cook till soft..
Add the Grated Coconut..
Finally Add Jaggery..
Garnish with Coriander leaves...

Goes well with Rice, Dosa, Idly, Chapathi too....
