BRINJAL MASALA

 
Hello Friends,,,
Today I've come up with my Ever Favorite Kathirikaai Masala...
When I was in Schooling,
My mom used to make lovely  Kathirikaai Masala,Drizzled with lots of oil...
But Now I use less oil & cook it ,Sprinkling water...
Now My daughter loves this with Dosas, rather than in her lunch...
Who would not love HomeGrown Veggies...
This time , I got this lovely Green Pinju Kathirikaai from
my Beloved Friend Kavitha Muthu's Garden...
It s irresistable to cook & gulp it with my Favorite Dosas...
Why don't you people try this dish too ...????
It goes well with Rice,Variety rice ,Even with simple Curd rice
Shall we proceed to the recipe now....!!!!

BRINJAL MASALA

Ingredients:
Oil-2 Tsp
Cloves-3
Cinnamon-2
Jeera-1 Tsp
Onions-2
Tomato-1
Garlic-6
Chinna Kathiri kaai-200 gms
Dhania Powder-2 Tsp
Chilly POwder-2 Tsp
Turmeric powder-1 Tsp
Salt-To taste
Curry Leaves
Coriander Leaves

METHOD:
 In a kadai,Take Oil,Add Jeera,Cloves & Cinnmon,Let it splutter..
Add Chopped Onions... Garlic... Fry well..
Then add Chopped Tomatoes...
Add the Thinly sliced Brinjals too... Saute in Medium fire...
Saute well....
Sprinkle some water....
Close the kadai & leave it to cook..

Add Dhania powder, Chilly pow,Turmeric, Salt.. 
Saute well...
Add Coconut Paste,Oil...
Fry till red...
Mix well...
Garnish with Curry leaves & Coriander leaves..
Serve Hot..


Can serve with Rice & Dosa too....

POONDU KULAMBU




Hi everyone...
After the heavy rains,Winter is around us...
This recipe is apt for this climate..
I personally prefer Puli Kulambu or Masala kulambu than Sambar..
So I collect recipes from all over...
This particular recipe is from my Close friend,Bhuvana from Karur...
We all love the Spicy,Tangy flavour & taste of this Kulambu...
And a special mention is- It is  suchhh... an easy kulambu,Which You can make in a jiffy...
As,I'm in Food groups in Facebook,
Today,When I shared my Menu, Many started asking the recipe for this.,..
I thought,I ll input the recipe here for all of our benefit...

Shall we jump into the recipe,Now..

INGREDIENTS:
Oil-2 Tsp
Garlic-20
Sambar Vadagam
Sambar Vadagam-1 Tsp
Chilly powder-2 Tsp
Dhania powder-1 Tsp
Turmeric- 1 Tsp
Salt
Tamarind- Lime sized
Jaggery-1 Tsp
Curry leaves
Coriander



METHOD:
Take oil in a pan,add Vadagam,
Then Full Garlic pods... Fry it well in oil,Till it gets cooked,
Can even sprinkle 1/4 cup of Milk to cook soft & tasty...
Now add the Chilly powder, Dhania Powder,Turmeric,salt,Simmer & Saute well...
Add the Tamarind pulp,Boil well,
Add a Dash of Jaggery
Give final touch with Coriuander & Curry leaves too..  
Serve hot with White Rice & appalam is a good Combination...

MAIDA HALWA



Hi all....
Many of u,may love sweets,But I don't have a sweet tooth...
Still some times,I too have a craving for sweets,That last week for my anniversary,
This MAIDA HALWA was my Neyar Viruppam,to my Mom...
She is an expert in this,,,,
She is making this after a very long time,I guess...
In those days,We don't have much sweets shops to buy Sweets,When guests arrive surprisingly...
Along with Kesari,Bajji,Bonda,This Maida Halwa,Used to come handy for them...
My Cousin Ramu anna's Favorite is this Halwa,
I remember,My mom making it Hot,Hot for him for lunch...

Its very easy,Yet Tasty sweet...
You can give a try...

INGREDIENTS:
Maida-1 Cup
Sugar-1 Cup
Water-1/2 Cup
Ghee-1/2 Cup
Cashews-10
Kismis-20
Cardamom powder-1 Tsp
Salt-A pinch

METHOD:
First Fry the Broken Cashews & Kismis in little Ghee & Keep aside...

Take a plate & grease it with Ghee generously...
Take Maida in a Bowl,Add little water & Mix it without lumps like Idly batter consistency..

In a Broad , Heavy bottomed Pan or Kadai,
Take the Sugar, Add 1/2 Cup Water.. Boil it,Till you get String consistency...
Now add the Maida batter to the Sugar syrup,Keep mixing...
Add Ghee little by little..
Keep stirring all the time in medium flame...
Add the Fried Cashews,Kismis,Cardamom powder,Salt.. Give a mix...
When it leaves the sides of the pan, Transfer it to the Greased Plate... 
Let it cool down for sometime,Then cut into pieces or even Scoop out & serve...
