MYSORE BENNE MASALA DOSAI


Hello Everyone,
Howz Life...???
Today We are gonna see a Spl Item,
What else than a Dosa,in my Blog...??

Whenever We go to restaurants,I end up my choice with a Dosa,
All hotels have a different taste of  Dosas..
But The one I love Ever is ,Mysore Butter Masala dosa of Karnataka...
My dad always used to Say,
Mangalore Mohini Vilas was the people who invented this particular Dosa..

Though,I love this,I have not tried So far...
It was always in my list to try...
Last week only,I tried it & it was Awesome.... :-)
All of us loved it so much..


The Crispy dosa,With The Red Chutney applied &
Potato Masala Kept inside & Rolled,Drizzled with a Dollop of Butter on it,...

Wow.... Wow....
For a Foodie...This is the ultimate Bliss,to Relish on a Relaxed Morning or Evening...

My daughter loved it so much,that She wants this Dosa regularly instead of Normal Dosa...

I bet,The Crispy,Tasty,Colourful dosa will sure steal your heart too....

Let me proceed to the menu...

         

 MYSORE BENNE MASALA DOSA


INGREDIENTS:

FOR BATTER:

Raw Rice-1 Cup
Parboiled Rice-1 Cup
Urad Dhal-3/4 Cup
Chana Dhal-1/4 Cup
Tuar Dhal-1/4 cup
Methi-2 Tsp
Soak all this together for 3 Hours..

Poha-Beaten Rice-1/4 cup
Soak this just for 1/2 an hour..

Grind Poha first,Then Grind the Rice & Dhals together to a slightly coarse paste..
Add salt,Mix well & let it ferment atleast for 8 Hours..


After 8 Hours...The fluffy Batter is ready,
U can Check ur consistency,
If Batter is thick.. Can add little water to make it loose...

RED CHUTNEY:

The best part of the Mysore Masala Dosa is the Red Chutney...


Chana Dhal-4 Tbsp
Red Chillies-8
Small Onions-5
Garlic-4
Salt
Tamarind-Very little(Optional)
 Saute all this with little oil,Cool & Blend it...



POTATO MASALA:

Oil-1 Tsp
Mustard-1 Tsp
Urad Dhal-1 Tsp
Garlic-4 Crushed
G.Chillies -4 Slit into2
Onions-1 Cup
Potato-2 Cups (boiled ,Peeled & mashed)
Tomato-1
Salt-To taste
Turmeric-1 Tsp
Dhania powder-2 Tsp
Cashews-5 (Broken & Fried in Ghee0
Curry Leaves-Little
Coriander leaves-Little

Heat Oil,Add mustard & let it Splutter,Then add Urad dhal,
Curry Leaves,G,Chillies,Garlic,Onions,Tomatoes..
Saute for a while.. Then add the Mashed Potatoes,Salt,Turmeric,Dhania powders..
Add little water & Cook well..
Finally add the Coriander leaves
Add the Fried Cashews too...

 Making of Dosa...


The batter will be quite fluffy,
Just take Ladle full of batter,Pour on  a heated Tawa & Spread with the ladle...
Keep the flame in low,Close & Cook it...
No need to flip it..
Drizzle few drops of oil..
Once it turns red,Apply little chutney,Spread it...




Keep a Tbsp of Potato masala,
No need to spread it,
Just roll the Dosa or just Fold into half,
On top of the Dosa, keep a Dollop of Butter..
The butter gets melted by the Heat of the Dosa & it is so inviting...


BENNE is nothing but BUTTER,VENNAI.... ;-)



The Dosa with Chutney & Masala is yummy by itself ,
But can enhance it by serving Sambar along with it...

As You all know, Karnataka Sambar & Our Arachu vitta sambar has a tint of sweet taste,
Which goes well with this...

MADHUR VADA



Hi Friends...
Hope you all enjoying the festive season...
We Indians are so lucky that we celebrate Festivals often..
From Aadi Perukku,It starts Festive season like 
Varalakshmi Viradham,Gokulashtami,Pillayar Chathurthi,Onam,Navrathri Golu,Ayuda pooja,Vijaya Dasami,Followed by Diwali,Deepam... Goes to Pongal...
Our Elders have found a way to celebrate life...
With the name of  God & religion,Our Ancestors have charted down every month with a Spl day...

Esp.The Golu makes as Feel happy meeting so many people,Engaging ourselves & keeping away from our routine...

My recipe today is a Instant Vada..
It is called MADHUR VADA...



It hails basically from Karnataka from a Village called Madhur,I heard..
When We enter Karnataka in trains,That too early in the morning,
The Aroma of the Vada & look of its crispiness,The Browned Onions in it,
draws us to the vendors , get few & gobble it...
It was in my list,for very long time & recently tried it,
When My sister dropped in home...

It is a very easy & simple dish,
Which you can make in very less time...
No need Soaking or Grinding too....Voila....

Let's jump into the recipe....

MADHUR VADA 

Ingredients:

Maida-1 Cup
Rice Flour-1 Cup
Rawa-1/2 Cup
Salt-To Taste
Onions-2
G.Chillies-3
Jeera-1/2 Tsp
Hot Oil-2 Tsp

Mix all the ingredients together,Except Oil...
Heat the oil,Add to the flour... Mix & crumble it...
Sprinkle water & knead slowly to form a stiff dough...
Leave it for 1/2 an hour or so... 

Make balls..
Take a ball on your Greased Palms,flatten it with your fingers,into thin Vadas...
Deep fry in hot oil,till Brown...

You can have it like this itself or serve with Coconut Chutney or Tomato Ketchup..
