Hello friends,
So, What is ur favorite dish in your Dinner menu,when u go out to restaurants...???
For us,It is a Hot Soup after a tiring day...
The first item,We would look for is the soup & We never had lots of choices ,like now,..
It used to be Tomato or Veg or Sweet Corn soup- that too only in big restaurants...
Still,We have the craze for that Bread cubes floating on the soup...
So,Today I'm giving u all,Cream of Tomato Soup,Restaurant style..
Lets look into the recipe..

INGREDIENTS :
Bangalore Tomatoes-4
Butter-2 Tbsp
Bay leaf-2
Garlic-5 (Chopped Finely)Onions-1
Cornflour-2 Tbsp
Salt-to Taste
Pepper-2 Tsp
Sugar-2 Tsp
Bread cubes-1 Cup
Wash Tomatoes,Heat 2 cups of Water,When boiling,
Add whole tomatoes into it,Boil just for 2-3 mins,
Off the stove..
Now Take a bowl full of Chilled ice water..
Leave it for 2 mins...
Now you can easily peel the Skin...
Put it in a mixie & Grind it well,Filter the seeds & keep aside..
Take Cornflour,Mix with 1/2 Cup water,
mix without any lumps.. Keep aside..
Fry Bread Cubes in 2 tsp of Butter,Keep aside.
In a pan,Take 2 Tsp of butter,
Add Bay leaf,Garlic saute well
Add Onions.. Saute till it turns Pink.
Add the Tomato Puree..
Add Salt,Pepper
Bring it to boil..
Add the CornStarch..
Mix it without any lumps...
Once it comes to soup Consistency,Check Salt,
Add Sugar...
Transfer to Serving Bowl,Garnish with Fried Bread & Coriander leaves.
You can sprinkle Fresh cream/butter for richness.
