ALOO PANEER TIKKIS


 

 Hi Friends,
 A warm good Evening to you all...
 Summer is heading,So is the holidays for the kids.
 Those were the days,we used to spend with our cousins,Neighbours..
We used to play whole day long irrespective the Hot Shiny Sun or Sultry day.
We would just come home to have our meal & run again..
If not playing in Hot sun,atleast we all would ve gathered in one house,
 playing some indoor games.....
I rem'r My Mom & Patti making Murukkus,Nippatu,
Kadala Urundai,Rawa ladoo,Mysore Pagu etc at home
in Big thookus after distributing to relatives & Neighbours too...

We never had choice but to eat whatever provided...
But These days,Kids are so choosy & comparitive..
I manage to give my daughter Homemade foods & Snacks..

Best way to make your kids finish their Vegies is to make it as a Soup or Cutlets..
I prefer making Tikkis nowadays,as it doesnt need any Coating.
It can be Either Shallow fried or deep Fried too.
I shallow fried in a Non Stick Tawa... 
Tikkis are always very easy & can make with available ingredients.
You can add Paneerr,Cheese,Sprouts,Veggies,Soya,Greens,
Spring Onions,Capsicum,Sweet corn & make it more Healthier...
Shall we look into the recipe now...!!!








 ALOO PANEER TIKKI    🥔🧀🍘

Potato-4
Paneer-100 gms
Onion-2
Bread-2  slices
Cashews-10
Salt
Chilli Powder-1 tsp
Jeera Powder-1 tsp
Garam Masala-1 tsp
Coriander leaves





Boil & Peel Potatoes,Mash it well..
Grate Paneer..
Chop Onions..
Dip Bread in Water & crumble it..

Now in a Large Bowl,
Mix altogether..
Make Balls
Flatten It...

(Today I added Roasted Gram Powder too,It Helps to Bind it well)

In a Pan ,Pour Oil,Drop the Tikkis & Fry till Brown & Crispy.
Decorate it with a Fried Cashews.

You can Even Deep Fry it.
Serve hot with Tomato Ketchup.

GHEE RICE with EGG MASALA



Hi Friends..
A big hi from me after a long time..
How many of you like to make special foods on weekends...???
Being a Pure Vegetarian,I love to make & have some Spl foods on weekends...
Why should Non Vegetarians only have fun with Spl food on Sundays...???

My Mom makes Lovely Ghee rice...
As we are Vegetarian,Mom adds Boiled eggs at the end to the Masala...
Reserve the gravy alone for us.....
Here I come up with our Home Spl Ghee Rice along with Egg Masala

 

GHEE RICE

Ghee-2 Tbsp
Oil-2 Tbsp
Cloves-4
Cinnamom-2
Cardamom-2
Bay leaves-2
Onions-2
Tomatoes-2
Ginger,Garlic Paste-2 Tsp
Salt-To Taste
Cashews-10
Basmati Rice-2 Cups
Coconut Milk-4 Cups (Grind Coconut,Add Hot water & Take Milk)
Coriander Leaves


Take Ghee & Oil in a Pressure Pan,
Add Cloves,Cinnamon,Cardamom,Bay leaves,Jeera...
Add Sliced Onions,G.Chillies,Saute well....
Add Tomatoes... Ginger Garlic paste.. Salt
Put the Soaked Basmati Rice...
Heat Coconut Milk & add to the Rice...
Close the Pan,Leave 2 Whistles..
Release the Pressure,Mix well.
Garnish with Fried Cashews..
Serve Hot..




















EGG CURRY

Eggs-3
Oil-1 Tsp
Jeera-1tsp
Cloves-1
Cinnamon-1
Onions-2
Tomatoes-2
Ginger,Garlic paste-1 Tsp
Chilly powder-2 Tsp
Dhania powder-2 Tsp
Turmeric powder-1/2 Tsp
Salt-To taste

Take oil in a Kadai .
Add the spices..
Onions,Toamtoes,Ginger Garlic paste,Saute well
Add Dry Powders,Salt
Off the Stove.. Cool it..
Blend in a mIxie..

In a Kadai,Take Oil,Add Jeera,Ground masala
Check the Spices & Salt..
Let it come to a Boil..
Add capsicum..
Finally add Boiled & Sliced Eggs..
Garnish with Coriander leaves..
It goes well with Ghee Rice,Pulaos,Chapathis ,Dosas too..
