                      BITTERGOURD FRY

Hi Friends,
Another big hello from me to you all...
Of late,I've been seeing many of us addicted to Western food 
with lots of So called English Veggies,Like Carrots,Beans,Cauliflower etc..
So Now i'm here with our Country veggies-Naattu kaaigal

Today it is Bittergourd in my list.
Even I used to hate this veg bcos of its bitter taste.
But Few tips while cooking makes it yummy...
And It has so many good qualities,Mainly,For Diabetic people..
Heard,it s good for Kids to wear out the germs in their stomach..
Now i made a point to give this to my family,atleast twice in a month..

Without wasting your time,Lets look into this Recipe..


Ingredients:
Bittergourd-2
Curd-1 Cup
Salt-1 tsp

Oil-2 tsp
Onions-1
Curry Leaves
Jeera-1 Tsp
Chilly powder-2 Tsp
Turmeric powder-1 Tsp
Dhania powder-2 tsp
Sambar Powder-2 tsp
Salt-1 Tsp
Curd-1 Cup



Method:
Chop Bittergourd into thin Slices,
Mix Salt & Mix well,Add it to Curd & Marinate it for 15 Mins...

Now,Take a Kadai, Add 1 Tsp Oil, Add Jeera,Curry Leaves,Chopped Onions... 
Fry for a min,..
Now after 15 mins of soaking,Take out the Bittergourd from the curd &
Squeeze out the whole curds & Add only Veg to the kadai...
Then add all the dry powders,Mix well...
Sprinkle 1/2 cup of water,Close & cook the veggies..
Simmer the Flame...
Add little more oil & Keep frying for more time...
Keep frying,Till it Turns Brown & Crispy..
At the end, Add a Dash of Powdered Jaggery.
Yummy Healthy Bittergourd Fry is Ready,...


Tips:
Soaking in Curds Lessen the bitterness..
Washing in Rice Washed Water too helps..
Adding Tamarind removes the Bitterness..
Jaggery enhances the taste..

CRUMB FRIED PANEER FINGERS

  
Hi Friends,
Happy to meet you all after a Loonggg gap...
Hows life going on...??/
This time ,I'm coming up with a Simple Snack..

Who don't like Fried snacks,That too Lip Smacking Taste..
Saw this in Chef Venkatesh Bhat's TV Show & Tried it immediately..
The result was awesome,We all loved it &
 This recipe has been repeated regularly in our Menu...
It Doesn't need an elaborate list of ingredients,But just a few only..
Thought of sharing with u all.
Try out & enjoy this Easy Peasy,tasty Snack...


Recipe Follows:

INGREDIENTS:
Paneer or Mozerello Cheese-100 Gms
Pepper Powder-2 Tsp
Salt-1 Tsp
Lime Juice-1 Tsp
Italian Seasoning-1 Tsp(Used for Pizzas)

To Dip:
Maida- 1/2 Cup
Water- 1/4 Cups
Salt-A pinch
Mix Maida,Salt & water to a Thin Batter... Keep aside

To Roll:
Bread Crumbs-2 Cups


METHOD
Cut Paneer or Cheese into Fingers
Sprinkle Pepper powders,Salt,Lime & Herbs..
Just mix with your fingers
Taking care ,Not to break it..
After 10 mins,dip it in Maida Batter
Roll on Bread Crumbs...
Refridgerate it for 10 mins
Now,Deep fry it,just in medium Hot oil..
Serve hot with Tomato Sauce & Mayonnaise

Yummy,Instant Starters ready in few Mins...

POTATO GARLIC FRY

Hi Guys,
Who on earth ,dont like Potatoes,
But My daughter doesn't like Potatoes as fry ,but only chips...
So,I wanted a good recipe & I found it
from my Close Friend Deepa Prasanna,
Who made this for her Loving Daughter,Kirthiga,
It Was very easy,Yet tasty too & We all loved it...
We usually add,Spices,Spice powders,garam Masala etc...
But This recipe calls for very few Ingredients...
Very easy ,yet Tasty...
So,I thought of sharing it with you all...
With My Besties, Kavitha, Me & Deepa

POTATO GARLIC FRY
Potatoes-2
Garlic-8 Pods
Chilly Powder-3 Tsp
Salt-To Taste
Oil-2 Tbsp

Crush the Garlic..
Peel & Cut Potatoes into small cubes & Half Boil it...

Take oil in A Heavy Bottomed Kadai,
Add the Crushed Garlic,Potatoes,Chilly Powder,Salt...
Keep sauteing in medium flame...

Just  keep stirring occasionally...
Can Garnish with Coriander leaves & Fry till Crisp...

Easy,Yummy Potato Garlic Fry Ready..
It goes well with variety Rices,Sambar rice,
Curd Rice or even Simple Rasam rice...

KAJU KATLI-BLOG 2nd ANNIVERSARY SPECIAL

Hi Friends,

I'm Very happy to share you all that My Blog-Rg's Delicacy has completed 2 Lovely years..
I've tried sharing my Favorite dishes here.
More than sharing with you all,It s more like writing in a Diary for Myself... ;-)

I remember starting my Blog with  a Sweet, on account of my Mom's Birthday-2015,
Again ,For my blog's 2ndAnniversary, 
Here I come, with my Daughter's Favorite Sweet KAJU KATLI.
Not only hers,Many of us love it...,Right...??

I hardly put my hands in Sweet Dishes,
This was in my list for a very long time,
At last, I put my hands today & It turned out to be Soooo Yummy...

Its very easy Peasy one & Requires just 3-4 ingredients,
 No need to hunt for many things...
No worries about the Paagu padham etc.


Let's take a look into the recipe now...


INGREDIENTS;
Cashews-1 Cup
Sugar- 1/2 Cup
Cardamom Powder-A PInch
Ghee- 2 Tsp
Water-1/4 Cup




METHOD ;
Take the Cashews in a Dry Mixie jar, Using the whipper buttom,Powder it,
(Dont run the mixie in normal buttom,It ll form as a Paste,We need Dry Powder only)
 In a Non stick pan or a Heavy bottomed kadai like Calcutta Vaanali,
Take water,Add Sugar...
Let the sugar dissolves fully...
No need to get Consistency & all ...
Just a Thick syrup- பிசுக்கு பதம், should be fine...
























Now Add the Cashew Powder,Keep stirring..
Stir that it doesn't form any lumps... 
When it thickens, Add the Ghee too..
Keep stirring all the time....
When it Leaves the side of the pan,Off the stove & transfer to a greased plate..
Let it rest for few minutes,Once it warms down,Knead well with your palms..
Keep it on a Butter paper or a Greased sheet,
With a Roti Pin,Roll it into little thick Chapathi..
Using a Sharp Knife,Cut into Diamonds. 
Serve your Family,Friends & Relish it ..

Sweet Shops Decorate with Silver Varq-Foil,I dont prefer it...
